i have a chocolate tempering tutorial on my blog. You definitely want an oven-going thermometer, the kind where the probe is not part of the readout device-- otherwise the readout is going to get covered in chocolate. But if you have a good thermometer and some patience, it's not too hard and you can even remelt and fix most mistakes.
If you go with the 50-lb. marble slab instead of the thermometer, you're on your own.
